# parasite #
Pepper products in the process of drying and transportation, there is a possibility of biological contamination, such as contaminated eggs, and in the powder and selection process is not found. If it is not killed and treated in time, it is packaged and transported to the other country, it may emerge into adult insects. For example, Mexico has detected tomato bacterial canker and other larvae and eggs in dried chili peppers exported from China.
# Sand, impurities #
Chilies may be mixed with sand during the picking and drying process, and foreign countries will strictly quarantine the impurities carried in the Dried Chilli, such as pepper handles and hair, and report to return non-food impurities found. For example, dried chili peppers exported by our country to Chile have been notified by their authorities because they were found to have feces and feathers.
# Pathogenic bacteria #
Pathogenic bacteria mainly include salmonella, Staphylococcus aureus, Escherichia coli. The chili powder exported from the United Kingdom was found to be Salmonella, and the Food and Drug Administration immediately reported that China's dry red pepper did not meet the sanitary standards. In addition, the Korean Codex Alimentarius also stipulates that the Bacillus cereus in ready-to-eat processed foods shall not exceed 1000 /g, and the Clostridium perfringens in chili powder and crushed chili peppers shall not exceed 100 /g.
# Biotoxin #
China's GB2761 "Limits of Mycotoxins in food" does not stipulate limits of mycotoxins for vegetables and their products and spices. South Korea stipulates that the total amount of aflatoxin in dried chili and chili powder shall not exceed 15.0μg/kg, aflatoxin B1 shall not exceed 10μg/kg, and ochratoxin A in chili powder shall not exceed 7.0μg/kg. Chili products exported to Japan, the European Union, the Netherlands and other countries have been warned of excessive aflatoxin detection.
# Heavy metal #
China's GB2762 "Limits of Pollutants in Food" stipulates the limits of 5 heavy metals such as lead, cadmium, mercury, arsenic and chromium for vegetables and products. South Korea has set limits for lead and cadmium in fresh peppers, stipulating that lead should not exceed 0.2mg/kg and cadmium should not exceed 0.1mg/kg. When exporting pepper products, we should pay attention to communicate with the importer in advance to confirm the specific limit value of heavy metals in the importing country.
# Additive #
Monascus, for example, is a microbe that produces food coloring. Until 2008, South Korea allowed it to be added to pepper products, and then South Korea stipulated that the use of monascus pigment should not be used in the manufacture of natural spices. Because the South Korean side failed to inform our country of its policy adjustment in time, a number of export enterprises failed to adjust the formula as required, and a number of factories were returned, resulting in greater economic losses.
# Harmful chemicals #
For example, Sudan red pigment, which is a man-made chemical agent that is prohibited to be added to food, since 2004, the European Union began to test Sudan red pigment in pepper products, setting off a global technical storm to clean up Sudan red pigment in food.
# Metal foreign body #
Because the Paprika process requires pressing and grinding, the natural wear between machines will cause the powder to mix iron powder particles. South Korea has very strict requirements for metal foreign bodies, requiring that the iron powder content in chili powder shall not be higher than 10.0mg/kg, and metal debris with a diameter of more than 2mm shall not be detected.
# Pesticide residue #
The number of indicators on the pesticide residue limit standard and the type of pesticide vary greatly from country to country. At present, all countries are gradually establishing more and more strict food residue management system, and the threshold of pepper export in China is rising. In the chili peppers and chili products exported to Japan and South Korea, the residues of pesticide chemicals such as dimethylpyrimetriazol, biphenyltriazolol, pyrimetriamine, benzo and triazolphos exceeded the standard.
# Color price #
According to the relevant provisions of the Korean Tariff Law on the color difference of Chili Sauce seasoning, the red color is lower than or higher than 34.76, will be classified under different tax numbers, the tariff difference is large, and the red color is higher than 34.76, and it is possible to be judged as an illegal product.
